A fellow coworker got very interested in travel hacking after he heard about my trip to the Maldives.  I recommended he start with the American Express Business Platinum card that had a 100,000 membership reward bonus after spending $15,000 in 3 months at the time [current offer may be different].

One nice perk of the American Express Business Platinum card is that it provides $200/calendar year credit for incidentals of an airline of your choice – therefore meaning he could receive a $200 credit in 2017 and again in January of 2018 for a total of $400 in credits in his first year of having the card.

I told him that I’ve always purchased (2) $100 giftcards to my designated airline of choice and this has always triggered the credit (even though the terms indicated that airline tickets & gift cards are not considered incidentals).  Before buying any giftcards or trying to use the credits, be sure to make your airline selection here:  https://www.americanexpress.com/airlinechoice.

After registering the airline of your choice, you are free to make the purchases.  There are forums on Flyertalk where people post what items they have been successful in receiving credits for.  Here is my experience and timing on buying $100 Southwest gift cards.
